Ingredients
- 10 eggs
- 1 cup pepper jack cheese, shredded
- 1/2 cup cottage cheese (regular not low fat)
- 1 pkt La Preferida Organic Taco Seasoning
- 1/2 cup diced ham or protein of choice
- non-stick spray or cupcake liners
- muffin or cupcake pan (regular or small)
Method
- Preheat over to 400 degrees F. Place baking dish with 1″ of water in the bottom of the oven to add moisture.
- In a large bowl, whisk together 1 egg and taco seasoning packet. Make sure to get rid of all clumps. Whisk in the remaining eggs.
- Mix cottage cheese and shredded cheese into the batter.
- Spray muffin tin with non-stick spray or use cupcake liners. (If using a small muffin tin you will have to make multiple batches.)
- Add diced ham to each muffin tin cup. Then top with egg mixture until slightly below full.
- Cook for 15 minutes or until the center is just set. Repeat with the remaining egg mixture.
